TYPE OF WINE
Cabernet Sauvignon hand-selected grapes from vineyards located in Porreres (Mallorca – Balearic Islands). Grapes are harvested in 15-20-kg boxes and immediately taken to the cellar, where they are stored in a cold chamber under 5º C for 24-48 hours in order to prevent early fermentation.
Traditional winemaking methods without adding yeast or bacteria (according to DEMETER INTERNACIONAL standards). Fermentation and ageing at controlled temperature.
12-15 months in a new French oak barrel. At least 15 months in a bottle.
It was awarded gold medal at the Concours Mondial de Bruxelles. held in Valladolid attended by 500 professional wine tasters.
Visual: Purplish-red with some violet touch in the thin layer. High-medium intensity.
Nose: Intense aromas attributable to red berries, black fruits and some earthy and spicy notes. Subtle nuances of violet are also appreciated.
Subsequently, a slightly smoky and roasted touch provided by its barrel ageing is appreciated.
Palate: On the palate, the perfect balance of the wine is confirmed given the concentrated aromas of ripe black fruits and spices supported by an integrated structure of tannins and a balanced acidity. The perfect integration of the barrique in the controlled aging is confirmed.
Serving temperature: 15 – 17 degrees approximately.
Pairing and harmony: Red meats, casseroles and stews, cold meats and cured cheeses, mostly.
