Description

ORIGIN

Protected Geographical Indication IGP Vi de la Terra de Mallorca.

TYPE OF WINE

Red.

VARIETY/IES

100 % CABERNET SAUVIGNON: This variety endures well the ageing because of its high contents in tannins and acidity. It produces wines with a medium to high alcohol content. In the case of Ca’n Feliu we rely on this to achieve wines with a high longevity, as well as with body and structure. This variety provides black fruits and smoky aromas and some spicy essences.

YEAR: 2015. Temperatures that year were somewhat lower than those of other years, as well as the rainfall level. It was a rather dry year, which could have affected the quality of the grape, but in the case of Ca’n Feliu drip irrigation is used, so a limited but balanced harvest was obtained, resulting in wines with good body and acidity.

PRODUCTION PROCESS

Hand-selected
grapes from vineyards located in Porreres (Mallorca – Balearic Islands). Grapes are harvested in 15-20-kg boxes and immediately taken to the cellar, where they are stored in a cold chamber under 5º C for 24-48 hours in order to prevent early fermentation.
Traditional winemaking methods without adding yeast or bacteria (according to DEMETER INTERNACIONAL standards). Fermentation and ageing at controlled temperature.

AGEING

12-15 months in a new French oak barrel. At least 15 months in a bottle.

AWARDS

It was awarded silver medal at the Concours Mondial de Bruxelles.

SENSORY ANALYSIS

Visual: Ruby red with violet reflections in the thin layer. High-medium intensity.

Nose: On the nose, this wine is representative of its grape variety since it brings a ripe black fruits aroma with subtly spicy notes.
Subsequently, a slightly smoky and roasted touch provided by its barrel ageing is appreciated.

Palate: On the palate, the perfect balance of the wine is confirmed given the concentrated aromas of ripe black fruits and spices supported by an integrated structure of tannins and a balanced acidity. The perfect integration of the barrique in the controlled aging is confirmed.

Serving temperature: 15 – 17 degrees approximately.

Pairing and harmony: Red meats, casseroles and stews, cold meats and cured cheeses, mostly.
