40% Callet, 20% Cabernet Sauvignon, 20% Syrah, 20% Merlot.
This Majorcan wine is produced only with hand-selected grapes from vineyards located in Porreres (Mallorca – Balearic Islands). Grapes are harvested in 15-20-kg boxes and immediately taken to the cellar, where they are stored in a cold chamber under 5º C for 24-48 hours in order to prevent early fermentation. Traditional winemaking methods without adding yeast or bacteria (according to DEMETER INTERNACIONAL standards). Fermentation and ageing at controlled temperature.
10 months in a three-year French oak barrel.. At least 12 months in a bottle.
Visual: Brick red color. Medium intensity.
Nose: Aromas attributable to the Callet variety, such as jam and red berries, as well as some earthy touch. It also has some oaky touch provided by its barrel ageing.
Palate: It has a good alcohol-acidity balance. It is a structured full-bodied wine, but fresh at the same time. It is silky and round. It enters smoothly and has a pleasant aftertaste.
Serving temperature: 15 – 17 degrees approximately.
Pairing and harmony: Game and poultry, even fish. Also, pasta and rice.
