2016 summer was dry and hot, perfect for the maduration and phytosanitary conditions of the berries. The Syrah and the Merlot were harvested at the beginning of September and the Cabernet Sauvignon at the last week of the month.
Grapes were selected and harvested by hand in vineyards near to the winery, in Porreres (Mallorca – Balearic Islands). Traditional methods without no yeast and no bacteria added, only with spontaneous fermentation respecting Demeter defined rules. The fermentation by controlled temperature of the varieties were done separated, blending them at the end of the process. The ageing was done in French 225 liters oak barrels for 12 months before blending and bottling.
