The temperatures this year were very mild. It was a very dry year which could have affected the quality of the grapes but drip irrigation was used, so a balanced harvest was obtained, obtaining wines with good body and acidity, predicting a long-lived wine.
Winemaking Process
Handpicked and selected grapes from our vineyards situated in Porreres (Mallorca – the Balearic Islands). Grapes are collected in individual crates with a capacity of 15-20 kg. and immediately transported to the winery where they are cooled for 24-48 hours to under 5ᵒ C to avoid premature fermentation.
Traditional winemaking methods without the addition of yeasts or bacteria (following the DEMETER INTERNATIONAL standards). Fermentation and keeping at controlled temperatures.
12 – 15 months in new French oak barrels. At least 15 months aging in bottle.
Tasting Notes
Visual: reddish-purple with some violet reflections, medium intensity – high.
Nose: aromatic and intense, with aromas of red and black fruits, spicy and earthy. Subtle nuances of violet are also appreciated. Afterwards, a slightly smoky and roasted note contributed by the barrel aging.
Palate: perfect balance of the wine is confirmed, with concentrated ripe and spicy black fruits, supported by an integrated structure of tannins and a balanced acidity. Seamless integration of oak aging is confirmed.
Service Temperature: 15 – 17 C approximately.
Pairing: red meats, stews, sausages and cured cheeses.
