PRODUCTION PROCESS
Handpicked and selected grapes from our vineyards situated in Porreres (Mallorca – the Balearic Islands). Traditional winemaking methods without the addition of yeasts or bacteria. Fermentation and keeping at controlled temperatures.
AGING
12 – 15 months in new French oak barrels. At least 15 months aging in bottle.
SENSORY ANALYSIS
- Visual: garnet red color, medium intensity.
- Nose: aromas of licorice, with intense vegetable touches. Balsamic and smoky notes provided by the barrel.
- Palate: powerful, with marked tannins and high acidity. In retro nasal the vegetal and balsamic touches are again perceived.
Service temperature: 15 – 17 C approximately. - Pairing: game, meats and poultry, including fish. Also, pasta and rice dishes.
