PRODUCTION PROCESS

Hand-selected grapes from vineyards located in Porreres (Mallorca – Balearic Islands).Traditional winemaking methods without adding yeast or bacteria. Fermentation and ageing at controlled temperature.

AGEING

12-15 months in a three-year French oak barrel. At least 12 months in a bottle.

SENSORY ANALYSIS

Visual: Brick red color with some brownish hue. Medium intensity.

Nose: Aromas attributable to the Callet variety, such as jam and red berries, as well as some earthy touch. The Syrah grape variety brings ripe black fruits aromas as well as hints of wood, spices like vanilla and liquorice provided by its barrel ageing.

Palate: Well-structured wine good because of the year. It is also a fine and smooth wine with a pleasant tannin that results in a velvety and persistent aftertaste.

Serving temperature: 15 – 17 degrees approximately.

Pairing and harmony: Game and poultry, even fish. Also, pasta and rice.
